Ingredients

1 cup rolled oats

1/2 cup almond butter (or peanut butter)

1/4 cup honey or maple syrup

1/2 cup unsweetened shredded coconut

1/2 cup dark chocolate chips (dairy-free if desired)

1/4 cup chia seeds

1 tsp vanilla extract

1/2 tsp sea salt

Optional: 1/4 cup chopped nuts (such as almonds or walnuts) for added crunch

Instructions

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, chia seeds, and sea salt. Stir until evenly mixed.

Mix Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and creamy.

Combine Both Mixtures: Pour the wet mixture into the dry ingredients, and mix thoroughly until all the oats are coated. The mixture should be sticky but manageable.

Add Chocolate Chips: Gently fold in the dark chocolate chips and any optional chopped nuts until evenly distributed.

Chill the Mixture: Cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. This will help the mixture firm up, making it easier to shape.

Shape Into Bites: Once chilled, remove the mixture from the refrigerator and use your hands to roll it into small balls, about 1 inch in diameter.

Store Them: Place the energy bites in an airtight container. You can store them in the refrigerator for up to one week or freeze them for longer storage.
