1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

¼ cup granulated sugar

4 (8-ounce) packages cream cheese, softened

1 cup granulated sugar (for filling)

1 teaspoon vanilla extract

4 large eggs

1 cup sour cream

¼ cup all-purpose flour

Zest of 1 lemon (optional)

Preheat the Oven: Preheat your oven to 325°F (163°C).

    Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and ¼ cup of sugar. Mix until the crumbs are well coated. Press this mixture firmly into the bottom of a 9-inch springform pan to create the crust. Bake in the preheated oven for 10 minutes, then set aside to cool.

      Make the Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes. Gradually add in 1 cup of granulated sugar and continue mixing until combined.

        Add Eggs and Flavorings: Add the vanilla extract and zest of lemon if using, then incorporate one egg at a time, mixing on low speed just until blended (do not overmix).

          Incorporate Sour Cream and Flour: Gently fold in the sour cream and flour using a spatula until the mixture is just smooth and well combined.

            Bake the Cheesecake: Pour the filling into the cooled crust in the springform pan. Bake in the preheated oven for 55-70 minutes, or until the edges are set but the center slightly jiggles when you move the pan.

              Cool and Set: Turn off the oven and crack the oven door, allowing the cheesecake to cool gradually for about 1 hour. After cooling, let it chill in the refrigerator for at least 4 hours, ideally overnight.

                Serve: Carefully remove the sides of the springform pan. Slice with a clean knife and serve plain or with your favorite toppings like fresh berries, chocolate sauce, or a fruit compote.
