4 tablespoons unsalted butter

1 teaspoon sugar

1 teaspoon salt

4 cups beef broth

2 cups chicken broth

1/2 cup dry white wine (such as Sauvignon Blanc)

2 teaspoons fresh thyme leaves (or 1 teaspoon dried thyme)

1 bay leaf

1 baguette, sliced into 1-inch pieces

2 cups grated Gruyère cheese

1 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Caramelize Onions: In a large heavy-duty pot or Dutch oven, melt the butter and olive oil over medium heat. Add the sliced onions, sugar, salt, and black pepper. Cook for about 30-40 minutes, stirring occasionally, until the onions become deep golden brown and caramelized. This step is crucial to develop the soup's rich flavor.

    Deglaze the Pot: Once the onions are caramelized, add the dry white wine to deglaze the pot. Scrape up any browned bits from the bottom and let it simmer for about 5 minutes until the wine has reduced by half.

      Add Broths and Herbs: Pour in the beef and chicken broths. Add thyme and the bay leaf. Bring the mixture to a gentle boil, then reduce the heat and let it simmer uncovered for 20-30 minutes. Adjust salt and pepper to taste.

        Prepare the Baguette: While the soup is simmering, preheat your oven to 400°F (200°C). Arrange the baguette slices on a baking sheet and toast them in the oven for about 10 minutes until they are golden brown and crispy.
