2 cups cooked chicken, shredded or diced

1 cup carrots, diced

1 cup frozen peas

1 cup potatoes, diced (about 1 medium potato)

1 cup celery, diced

1/2 cup onion, diced

1/3 cup all-purpose flour

1/3 cup butter

2 cups chicken broth

1 cup milk

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon garlic powder

1 (9-inch) pie crust (store-bought or homemade)

1 egg (for egg wash)

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C).

    Cook the Vegetables: In a large skillet or pot over medium heat, melt the butter. Add in the onion, carrots, celery, and potatoes. Sauté for about 5-7 minutes, or until the vegetables start to soften.

      Create the Filling Base: Stir in the flour, cooking for about 1 minute to create a roux. Gradually whisk in the chicken broth and milk. Bring the mixture to a simmer, stirring constantly until it thickens (around 3-5 minutes).

        Add Chicken and Seasonings: Reduce the heat to low, and add the shredded chicken, frozen peas, dried thyme, salt, black pepper, and garlic powder. Mix until everything is evenly coated and warmed through. Remove from heat and set aside.
