2 cups fresh cherries, pitted and halved

1 cup granulated sugar

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup powdered sugar

1 teaspoon almond extract

1 1/2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1 teaspoon cinnamon (optional)

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the halved cherries, granulated sugar, lemon juice, and vanilla extract. Stir gently to combine and allow the mixture to simmer for 10-15 minutes until the cherries have released their juices and the mixture has thickened slightly. Remove from heat and let cool.

    Whip the Cream: In a large mixing bowl, use an electric mixer to whip the heavy cream until it begins to thicken. Gradually add the powdered sugar and almond extract, continuing to whip until soft peaks form. Be careful not to overwhip; you want the cream to be fluffy.

      Prepare the Crust: In a separate bowl, combine the graham cracker crumbs, melted butter, and cinnamon (if using). Mix until well combined and the crumbs resemble wet sand. Press this mixture firmly into the bottom of a 9-inch serving dish or pie platter to form a crust.

        Layer the Ingredients: Once the cherry filling has cooled, spoon half of it over the crust, spreading it evenly. Next, layer half of the whipped cream on top of the cherry mixture. Repeat with the remaining cherry filling and then top with the rest of the whipped cream.
