1 cup quinoa, rinsed

2 cups vegetable broth (or water)

2 cups broccoli florets (fresh or frozen)

1 cup sharp cheddar cheese, shredded (plus extra for topping)

1 cup milk (or dairy-free alternative)

1 small onion, diced

2 cloves garlic, minced

1 teaspoon olive oil

½ teaspoon dried thyme

½ teaspoon paprika

Salt and pepper to taste

½ cup breadcrumbs (optional, for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Quinoa: In a medium saucepan, combine rinsed quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all liquid is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.

      Sauté Vegetables: In a large skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 5 minutes. Add minced garlic and cook for an additional minute until fragrant. Stir in broccoli and cook until just tender, about 3–4 minutes (if using frozen broccoli, ensure it's fully heated through).

        Combine Ingredients: In a large mixing bowl, combine the cooked quinoa, sautéed broccoli mixture, shredded cheddar cheese, milk, dried thyme, paprika, salt, and pepper. Stir well until everything is evenly mixed.

          Transfer to Baking Dish: Pour the quinoa and broccoli mixture into a greased 9x13-inch casserole dish. Spread it out evenly.

            Add Topping: If desired, sprinkle additional cheddar cheese and breadcrumbs on top of the casserole for a crunchy texture.
