6 cups cubed day-old French bread (or brioche)

4 large eggs

1 cup whole milk

1/2 cup heavy cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

2 tablespoons granulated sugar (for topping)

2 teaspoons ground cinnamon (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a standard muffin tin with cooking spray or butter.

    Prepare the Bread: Place the cubed bread into a large mixing bowl. Set aside while you prepare the custard mixture.

      Make the Custard: In another bowl, whisk together the eggs, whole milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, nutmeg (if using), and salt until fully combined and frothy.

        Combine the Mixtures: Pour the custard mixture over the cubed bread. Gently fold it in with a spatula, ensuring that all the bread pieces are well coated. Allow it to sit for about 10 minutes so the bread can absorb the custard.

          Fill the Muffin Tin: Take the melted butter and mix it with the brown sugar until smooth. Place about a tablespoon of the brown sugar mixture into the bottom of each muffin cup. Then, fill each muffin cup with the soaked bread mixture, pressing down lightly to compact.

            Prepare the Topping: In a small bowl, combine the granulated sugar and ground cinnamon. Sprinkle this mixture evenly over the tops of the muffins.

              Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, until the muffins are golden brown and a toothpick inserted in the center comes out clean.

                Cool and Serve: Once baked, let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack. Serve warm, drizzled with maple syrup, or dusted with powdered sugar, if desired.
