6 cups day-old bread, cubed (white or brioche)

4 large eggs

1 cup milk

1/2 cup heavy cream

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1 tablespoon cinnamon (for topping)

1/4 cup granulated sugar (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or butter.

    Prepare the Bread: Place the cubed bread in a large mixing bowl and set aside. If you prefer, you can lightly toast the bread cubes in the oven for 5-10 minutes for added texture.

      Mix the Wet Ingredients: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, and salt until well combined.

        Combine: Pour the egg mixture over the bread cubes. Gently toss the bread until all pieces are coated. Let the mixture sit for about 10 minutes to allow the bread to absorb the liquid.

          Fill the Muffin Tin: Evenly distribute the soaked bread mixture into the prepared muffin tin, filling each cup about 3/4 full.

            Prepare the Topping: In a small bowl, combine the melted butter, brown sugar, cinnamon, and granulated sugar. Mix until smooth. Drizzle this mixture over the muffins in the tin, ensuring each muffin gets some topping.
