1 cup quinoa, rinsed

2 cups almond milk (or any milk of your choice)

1 teaspoon ground cinnamon

1 tablespoon maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1/2 cup diced apples (or fruit of your choice)

1/4 cup walnuts, chopped

1/4 cup raisins or dried cranberries

Pinch of salt

Slices of banana for topping (optional)

Additional maple syrup for drizzling (optional)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa, almond milk, ground cinnamon, maple syrup, vanilla extract, and a pinch of salt. Bring the mixture to a boil over medium-high heat.

    Simmer: Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes, or until the quinoa is tender and has absorbed most of the liquid.

      Fluff: Once cooked, remove the saucepan from heat. Let it sit, covered, for 5 minutes. Then, fluff the quinoa with a fork.

        Mix in Apples: Stir in the diced apples, walnuts, and raisins or cranberries into the warm quinoa, allowing them to warm through for a couple of minutes.

          Serve: Spoon the quinoa mixture into bowls. Top with additional banana slices if desired and drizzle with extra maple syrup for added sweetness.
