Cinnamon Roll Apple Pie Cups

Ingredients
  

1 can of refrigerated cinnamon rolls (8-count)

2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

1/2 cup brown sugar

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 tablespoon lemon juice

1 tablespoons all-purpose flour

1/4 cup raisins (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

1 tablespoon butter, melted

Frosting packet from cinnamon roll dough or homemade cream cheese frosting for topping

Instructions
 

Prepare the Apple Filling: In a medium bowl, combine the diced apples, brown sugar, ground cinnamon, nutmeg, lemon juice, flour, raisins, and nuts if using. Toss until the apples are well coated. Set aside to let the flavors meld while you prepare the dough.

    Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or butter to prevent sticking.

      Prepare Cinnamon Roll Dough: Open the can of refrigerated cinnamon rolls and separate them. Flatten each roll slightly with your fingers or a rolling pin to create a disk shape.

        Form the Cups: Press each flattened cinnamon roll into the greased muffin tin, making sure to press it up the sides to create a cup shape. You want the dough to cover the sides and bottom enough to hold the apple filling.

          Fill the Cups: Spoon the apple filling into each cinnamon roll cup, filling them generously but ensuring the filling isn’t overflowing since it may bubble during baking.

            Add Butter: Drizzle a little melted butter over the apple filling in each cup for added richness and flavor.

              Bake: Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the cinnamon roll dough is golden brown and the apple filling is bubbly.

                Cool and Frost: Once baked, remove from the oven and allow the cups to cool for a few minutes. Then, drizzle the included frosting from the cinnamon roll package over each cup. If you prefer, you can make a homemade cream cheese frosting for a more personalized touch!
