Ingredients

For the Muffins:

2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, melted and cooled

1 cup buttermilk, at room temperature

2 large eggs

1 teaspoon vanilla extract

1 cup raisins

For the Cinnamon Swirl:

1/2 cup brown sugar, packed

2 teaspoons ground cinnamon

1 tablespoon unsalted butter, softened

For Topping (optional):

Additional granulated sugar mixed with a pinch of cinnamon

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease the cups lightly.

Mix Dry Ingredients: In a large bowl, whisk together the flour, granulated sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

Combine Wet Ingredients: In another bowl, whisk together the melted butter, buttermilk, eggs, and vanilla extract until smooth.

Blend Batter: Pour the wet mixture into the dry ingredients. Gently fold until just combined. Do not overmix; it’s okay if there are a few lumps. Fold in the raisins.

Prepare Cinnamon Swirl: In a small bowl, combine the brown sugar, ground cinnamon, and softened butter until it has a paste-like consistency.

Fill Muffin Tins: Divide the muffin batter evenly into the prepared muffin cups, filling each about halfway.

Add Cinnamon Swirl: Dollop a teaspoon of the cinnamon sugar mixture on top of each filled muffin cup. Use a toothpick or knife to gently swirl the mixture into the batter for a marbled effect.

Bake: Bake in the preheated oven for 18-22 minutes or until a toothpick inserted into the center comes out clean. If using the topping, sprinkle a little cinnamon sugar over each muffin before baking.

Cool: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes. Then transfer them to a wire rack to cool completely.

Serve: Enjoy your warm Cinnamon Raisin Swirl Muffins as a delightful breakfast treat or an afternoon snack!
