1 teaspoon baking powder

½ teaspoon baking soda

½ teaspoon salt

2 teaspoons ground cinnamon

½ cup unsalted butter, melted and slightly cooled

¾ cup brown sugar, packed

½ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup buttermilk (or milk with ½ tablespoon vinegar)

1 ½ cups peeled and diced apples (about 1 large apple, such as Granny Smith or Honeycrisp)

½ cup chopped walnuts or pecans (optional)

Extra cinnamon sugar for topping (2 tablespoons sugar + 1 teaspoon cinnamon, mixed)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Line a muffin tin with paper liners or grease with non-stick spray.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground cinnamon. Set aside.

      Combine Wet Ingredients: In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until well combined. Add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.

        Incorporate Buttermilk: Pour in the buttermilk and mix until smooth. The mixture may look slightly curdled, which is normal due to the buttermilk.

          Combine Mixtures: Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix; a few lumps are okay!
