For the Churros:

1 cup water

1/2 cup unsalted butter

1 tablespoon granulated sugar

1/4 teaspoon salt

1 cup all-purpose flour

2 large eggs

1 teaspoon vanilla extract

Oil for frying

1/2 cup granulated sugar (for coating)

1 teaspoon ground cinnamon (for coating)

For the Chocolate Dipping Sauce:

1 cup heavy cream

8 ounces semi-sweet chocolate, chopped

1 tablespoon corn syrup

1 teaspoon vanilla extract

Instructions
 

Make the Churro Dough:

    - In a medium saucepan, combine water, butter, sugar, and salt. Bring to a boil over medium heat.

      - Once boiling, remove from heat and stir in the flour until thoroughly combined. The mixture will form a ball.

        - Allow the dough to cool slightly, then mix in the eggs and vanilla extract until smooth.

          Prepare to Fry:

            - Heat oil in a deep fryer or a large pot to 350°F (175°C).

              - Prepare a piping bag fitted with a large star tip, and fill it with the churro dough.

                Fry the Churros:

                  - Pipe strips of dough into the hot oil, cutting them to your desired length with a pair of scissors. Fry until golden brown, about 2-3 minutes on each side.

                    - Remove churros from oil and drain on a paper towel.

                      Coat the Churros:

                        - In a shallow dish, mix together the granulated sugar and cinnamon. Roll the warm churros in the cinnamon-sugar mixture until coated. Set aside.

                          Make the Chocolate Dipping Sauce:

                            - In a small saucepan, heat heavy cream over medium heat until it begins to simmer.

                              - Remove from heat and add the chopped chocolate, corn syrup, and vanilla. Stir until smooth and combined.

                                Serve:

                                  - Serve warm churros with the decadent chocolate dipping sauce on the side for dipping. Enjoy!
