Ingredients

2 ripe bananas

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

1 teaspoon cinnamon (plus extra for sprinkling)

1/4 cup sugar (plus extra for sprinkling)

1 large egg

1/2 cup milk

Oil for frying (canola or vegetable)

1 cup chocolate sauce (for dipping, optional)

Instructions

Prepare the Bananas: Peel the bananas and slice them into round pieces, about 1-inch thick. Set aside.

Make the Batter: In a mixing bowl, combine the flour, baking powder, salt, and 1 teaspoon of cinnamon. In another bowl, whisk together the egg and milk. Gradually add the wet ingredients to the dry mixture, stirring until just combined. The batter should be thick enough to coat the bananas.

Heat the Oil: In a deep frying pan, pour enough oil to cover the bottom by about an inch. Heat the oil over medium heat until it reaches approximately 350°F (175°C).

Coat the Bananas: Dip each banana slice into the batter, letting any excess drip off.

Fry the Banana Bites: Carefully place a few coated banana slices into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown, about 2-3 minutes per side. Use a slotted spoon to remove them and place them on a paper towel-lined plate to drain excess oil.

Coat with Cinnamon Sugar: In a small bowl, combine the remaining 1/4 cup of sugar with 1 tablespoon of cinnamon. While the banana bites are still warm, roll them in the cinnamon sugar mixture until fully coated.

Serve: Arrange the churro-inspired banana bites on a serving platter. If desired, serve with a side of warm chocolate sauce for dipping. Enjoy!
