For the Churro Crust:

1 ½ cups all-purpose flour

½ cup granulated sugar

½ teaspoon baking powder

¼ teaspoon salt

½ cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

For the Cheesecake Filling:

16 oz cream cheese, softened

½ cup granulated sugar

¼ cup sour cream

2 large eggs

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

For the Churro Topping:

¼ cup granulated sugar

1 teaspoon ground cinnamon

4 tablespoons unsalted butter, melted (for brushing)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Make the Churro Crust: In a large mixing bowl, combine the flour, sugar, baking powder, and salt. In another bowl, mix the melted butter, egg, and vanilla extract until well combined. Pour the wet ingredients into the dry mixture and stir until a dough forms. Press the dough firmly into the bottom of the prepared baking pan to create an even crust. Bake for 12-15 minutes, or until slightly golden. Let it cool.

      Prepare the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth using an electric mixer. Add in the sugar and beat until combined. Next, add the sour cream, eggs, vanilla, and cinnamon, mixing until just combined and smooth.

        Combine Layers: Pour the cheesecake filling onto the cooled churro crust, smoothing it out into an even layer.

          Bake: Bake the cheesecake bars in the preheated oven for about 30-35 minutes, or until the edges are set and the center has a slight jiggle. Remove from the oven and let it cool completely at room temperature. Once cooled, refrigerate for at least 3 hours (preferably overnight).

            Churro Topping: In a small bowl, mix the sugar and cinnamon for the topping. Once chilled, lift the cheesecake bars out of the pan using the parchment paper. Cut into squares or rectangles.

              Finish with Coating: Brush each piece lightly with melted butter and then sprinkle the cinnamon-sugar mixture generously over the top.
