1/4 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 teaspoon ground cinnamon

1/4 cup granulated sugar

1 teaspoon ground cinnamon

1/4 cup unsalted butter, melted (for drizzling)

Preheat the Oven: Preheat your oven to 325°F (163°C). Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal later.

    Prepare the Churro Crust: In a medium bowl, blend together graham cracker crumbs, 1/4 cup sugar, and 1/2 teaspoon cinnamon. Pour in the melted butter and mix until evenly combined. Press the mixture firmly into the bottom of the lined baking dish to form an even layer.

      Bake the Crust: Bake in the preheated oven for 10 minutes. Once done, remove from the oven and let it cool slightly while you prepare the cheesecake filling.
