Ingredients

For the crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the filling:

8 oz dark chocolate, chopped (70% cacao recommended)

1 cup heavy cream

½ cup whole milk

½ cup granulated sugar

½ teaspoon vanilla extract

2 large eggs

1 cup fresh raspberries

For the topping:

1 cup whipped cream (store-bought or homemade)

½ cup fresh raspberries

Chocolate shavings or cocoa powder for garnish

Instructions

Prepare the crust:

    - Preheat your oven to 350°F (175°C).

      - In a mixing bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.

        - Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish. Bake for 10 minutes, then remove from the oven and let it cool while preparing the filling.

          Make the chocolate filling:

            - In a small saucepan over low heat, combine the chopped dark chocolate, heavy cream, and whole milk. Stir continuously until melted and smooth.

              - Once melted, remove from heat and let it cool slightly.

                - In a separate bowl, whisk together the sugar, vanilla extract, and eggs until well combined (do not over-beat). Gradually pour the chocolate mixture into the eggs, whisking constantly to prevent curdling.

                  Assemble the pie:

                    - Carefully add the fresh raspberries to the cooled crust, scattering them evenly across the base.

                      - Pour the chocolate filling over the raspberries, ensuring an even distribution.

                        - Tap the pie dish gently on the countertop to release any air bubbles.

                          Bake the pie:

                            - Bake the pie in the preheated oven for 25-30 minutes, until the filling is set but slightly jiggly in the center.

                              - Once done, remove from the oven and let it cool at room temperature for an hour, then refrigerate for at least 2 hours to set fully.

                                Add the finishing touches:

                                  - Prior to serving, top the pie with whipped cream, remaining fresh raspberries, and garnish with chocolate shavings or a dusting of cocoa powder for an elegant finish.
