Ingredients

1 cup semi-sweet chocolate chips

1/2 cup unsalted butter

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup all-purpose flour

1/4 cup unsweetened cocoa powder

1/4 teaspoon salt

1/4 teaspoon baking powder

1/2 cup dark chocolate pieces (for the gooey center)

Optional: powdered sugar for dusting

Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a medium saucepan, melt the semi-sweet chocolate chips and butter over low heat, stirring until smooth. Remove from heat and let it cool slightly.

In a large mixing bowl, combine the granulated sugar, eggs, and vanilla extract. Whisk together until well combined.

Pour the melted chocolate mixture into the sugar-egg mixture and stir until fully integrated.

In a separate bowl, whisk together the flour, cocoa powder, salt, and baking powder. Gradually fold the dry ingredients into the chocolate mixture until just combined.

Take a tablespoon of the cookie dough and flatten it in your palm, placing a few dark chocolate pieces in the center. Form the dough around the chocolate to seal it completely and roll it into a ball. Repeat with the remaining dough and chocolate pieces.

Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.

Bake in the preheated oven for 10-12 minutes, until the edges look firm but the centers are still soft. The cookies will continue to cook slightly after being removed from the oven, giving them that lava-like center.

Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Optional: Dust with powdered sugar before serving for an extra touch of sweetness.
