Ingredients

3 ripe bananas, mashed

1/2 cup unsalted butter, melted

1/2 cup granulated sugar

1/4 cup brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/4 teaspoon salt

1 cup all-purpose flour

1/2 cup cocoa powder

1/2 cup espresso or strong brewed coffee, cooled

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Instructions

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and sugars (granulated and brown). Whisk in the mashed bananas until well combined. Next, add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients: In another bowl, whisk together the baking soda, salt, flour, and cocoa powder until light and airy.

Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, alternating with the cooled espresso. Mix until just combined—be careful not to overmix, as this can lead to dense bread.

Add Chocolate and Nuts: Gently fold in the semi-sweet chocolate chips and walnuts (if using) until evenly distributed through the batter.

Bake: Pour the batter into the prepared loaf pan, smoothing the top with a spatula. Bake in the preheated oven for around 60 minutes or until a toothpick inserted into the center comes out clean or with a few moist crumbs.

Cool and Serve: Once done, remove the banana bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before slicing.

Enjoy your Chocolate Espresso Banana Bread warm or at room temperature!
