Ingredients

For the Brownie Cups:

1/2 cup (115g) unsalted butter

1 cup (200g) granulated sugar

2 large eggs

1 teaspoon vanilla extract

1/3 cup (40g) unsweetened cocoa powder

1/2 cup (65g) all-purpose flour

1/4 teaspoon salt

1/4 teaspoon baking powder

For the Strawberry Topping:

10-12 fresh strawberries, washed and hulled

1 cup (175g) semi-sweet chocolate chips

1 tablespoon coconut oil (optional, for smoothness)

For Garnish:

Whipped cream (optional)

Chocolate shavings or sprinkles (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin pan or line it with paper liners for easier removal.

Prepare the Brownie Batter: In a medium saucepan, melt the butter over medium heat. Once melted, remove from heat and stir in the sugar until well combined. Let it cool slightly.

Add Eggs and Vanilla: Whisk in the eggs one at a time, then stir in the vanilla extract.

Combine Dry Ingredients: In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add this dry mixture to the wet ingredients, stirring until just combined; do not overmix.

Fill the Muffin Tin: Divide the brownie batter evenly among the muffin cups, filling each about 2/3 full.

Bake: Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs. Remove from the oven and let them cool in the pan for 5 minutes before transferring to a wire rack to cool completely.

Prepare the Chocolate Dip: While the brownie cups are cooling, melt the chocolate chips and coconut oil (if using) together in a microwave-safe bowl. Heat in 20-second intervals, stirring between each, until smooth and fully melted.

Dip the Strawberries: Once the brownie cups are cool, take your hulled strawberries and dip the tops into the melted chocolate, allowing any excess to drip off. Place the dipped strawberries on a parchment-lined baking sheet. Optional: Sprinkle chocolate shavings or sprinkles on the dipped chocolate before it hardens.

Assemble the Brownie Cups: Gently press a chocolate-dipped strawberry into the center of each brownie cup. If desired, add a dollop of whipped cream around the base of the strawberry for extra flair.

Serve and Enjoy: Allow the chocolate to set (you can refrigerate them for about 10-15 minutes to speed up the process). Serve these delightful brownie cups at room temperature or slightly chilled.
