For the crust:

1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

For the cheesecake layer:

16 oz cream cheese, softened

½ cup granulated sugar

1 tsp vanilla extract

2 large eggs

1 cup sour cream

For the strawberry layer:

1 cup fresh strawberries, pureed

2 tbsp granulated sugar

1 tbsp lemon juice

1 tbsp cornstarch

For the chocolate topping:

8 oz semi-sweet chocolate, chopped

1 tbsp coconut oil (or shortening)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter until well combined.

        - Press the mixture evenly into the bottom of a greased 9x9 inch baking pan. Bake for 10 minutes, then let it cool.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the cream cheese with an electric mixer until smooth and creamy.

              - Add in the sugar and vanilla extract, mixing until well incorporated.

                - Add the eggs one at a time, beating well after each addition. Finally, fold in the sour cream until smooth.

                  - Pour the cheesecake mixture over the cooled crust and spread it evenly.

                    Prepare the Strawberry Layer:

                      - In a small saucepan over medium heat, combine the strawberry puree, sugar, lemon juice, and cornstarch.

                        - Cook for about 5 minutes, stirring constantly until the mixture thickens. It should be slightly bubbly. Remove from heat and let it cool for a few minutes.

                          - Gently drop spoonfuls of the strawberry mixture onto the cheesecake layer. Use a knife or toothpick to swirl it into the cheesecake for a marbled effect.

                            Bake:

                              - Bake the cheesecake bars in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly. It will firm up as it cools.

                                - Turn off the oven and let the cheesecake cool in the oven with the door ajar for about an hour.

                                  Chill:

                                    - Refrigerate the cheesecake bars for at least 4 hours, preferably overnight, until they are completely chilled.

                                      Make the Chocolate Topping:

                                        - In a microwave-safe bowl, combine the chopped chocolate and coconut oil. Microwave in 30-second intervals, stirring in between until melted and smooth.

                                          - Allow to cool slightly before drizzling over the chilled cheesecake.

                                            Serve:

                                              - Cut into bars and drizzle any remaining chocolate over the top as desired. Garnish with fresh strawberries if desired.
