For the base:

1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

1/4 cup granulated sugar

1/4 teaspoon salt

For the middle layer:

1 cup sweetened shredded coconut

1 cup semi-sweet chocolate chips

1 cup chopped cherries (fresh or jarred, drained if using jarred)

1 can (14 oz) sweetened condensed milk

For the chocolate topping:

1 cup dark chocolate chips

1 tablespoon coconut oil

1/4 cup dried cherries, chopped (optional, for garnish)

Preheat Your Oven: Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch baking dish.

    Make the Base: In a medium bowl, combine the graham cracker crumbs, melted butter, granulated sugar, and salt. Mix until well combined. Press this mixture evenly into the bottom of the prepared baking dish to form a solid base.

      Layer it Up: Sprinkle the shredded coconut over the graham cracker base evenly. Next, add the semi-sweet chocolate chips, followed by the chopped cherries. Pour the sweetened condensed milk evenly over the top, ensuring to cover everything well.

        Bake: Place the dish in the preheated oven and bake for 25–30 minutes or until the edges are golden brown and the center is bubbly. Remove from the oven and let it cool completely in the pan on a rack, about 1 hour.

          Prepare the Chocolate Topping: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring until melted and smooth.

            Drizzle Chocolate: Once the bars are cooled, pour the melted chocolate over the top, spreading it evenly with a spatula. If desired, sprinkle the chopped dried cherries over the chocolate for an extra touch.

              Final Chill: Allow the chocolate to set at room temperature for about 30 minutes or refrigerate for 15 minutes.
