Ingredients

1 cup all-purpose flour

1 tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup Greek yogurt (plain or vanilla flavored)

2 large eggs

1/2 cup milk (any type)

1 teaspoon vanilla extract

1/2 cup semi-sweet chocolate chips

Butter or oil for cooking

Instructions

Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

Combine Wet Ingredients: In a separate bowl, mix the Greek yogurt, eggs, milk, and vanilla extract until smooth.

Combine: Pour the wet ingredients into the dry ingredients, and stir gently with a spatula until just combined. Be careful not to overmix; a few lumps are fine. Fold in the chocolate chips.

Preheat the Pan: Heat a non-stick skillet or griddle over medium heat and add a small amount of butter or oil to coat the surface.

Cook Pancakes: Pour about 1/4 cup of batter onto the skillet for each pancake, leaving space between them. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.

Flip: Carefully flip the pancakes and cook for an additional 2-3 minutes until golden brown and cooked through. Transfer to a plate and keep warm while you cook the remaining pancakes.

Serve: Stack the pancakes on a plate and top with extra chocolate chips, a dollop of Greek yogurt, and a drizzle of maple syrup if desired. Enjoy your delicious, fluffy pancakes!
