Ingredients

2 ripe bananas, mashed

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1/3 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup mini chocolate chips

1/2 cup chopped walnuts (optional)

1/4 cup maraschino cherries, chopped (plus extra for topping)

1/4 cup crushed pineapple, drained (for extra flavor)

1/2 teaspoon ground cinnamon

Instructions

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or spray it with non-stick cooking spray.

Mix Wet Ingredients: In a large bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix until well combined. Then, add the egg and vanilla extract, whisking until smooth.

Combine Dry Ingredients: In another bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.

Combine Mixtures: Gradually fold the dry ingredients into the wet mixture, mixing until just combined. Be careful not to overmix!

Add Add-ins: Gently fold in the mini chocolate chips, chopped walnuts (if using), chopped maraschino cherries, and crushed pineapple until they are evenly distributed in the batter.

Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.

Top and Bake: For an extra treat, place a few mini chocolate chips, pieces of cherries, or walnuts on top of each muffin. Bake in the preheated oven for about 18-20 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.

Cool and Serve: Once baked, remove the muffins from the oven and let them cool in the pan for about 5 minutes before transferring them to a wire rack. Serve warm or at room temperature, topped with a cherry for that classic banana split look!
