2 ripe bananas, mashed

1/2 cup unsweetened applesauce

1/3 cup honey or maple syrup

1/4 cup melted coconut oil or vegetable oil

1 teaspoon vanilla extract

1 cup rolled oats

1 cup whole wheat flour (or gluten-free flour)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup semi-sweet chocolate chips

Optional: 1/4 cup chopped walnuts or pecans for crunch

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, applesauce, honey (or maple syrup), melted coconut oil, and vanilla extract. Mix well until fully combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, baking soda, and salt.

        Combine Both Mixtures: Slowly add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix. If desired, fold in the chocolate chips and nuts at this stage.

          Fill Muffin Tins: Spoon the batter evenly into the prepared muffin tin, filling each cup about 3/4 full. You can add a few extra chocolate chips on top for presentation.

            Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
