3 ripe bananas, mashed

1/3 cup melted coconut oil (or vegetable oil)

1/2 cup brown sugar, packed

1 large egg, at room temperature

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted coconut oil. Stir until smooth. Then, add the brown sugar, egg, and vanilla extract. Whisk together until fully combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the baking soda, salt, and flour. This ensures the baking soda is evenly distributed throughout the flour.

        Combine Mixtures: Slowly add the dry mixture to the wet ingredients, stirring gently until just combined. Avoid overmixing; a few lumps are okay!

          Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips and chopped walnuts (if using), being careful to keep the mixture fluffy and light.

            Fill Muffin Tin: Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full to allow room for rising.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
