Chocolate Chip Banana Muffins – Soft & Moist!

2 ripe bananas, mashed

1/2 cup (115g) unsalted butter, melted

1/2 cup (100g) brown sugar

1/4 cup (50g) granulated sugar

1 large egg

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

1 1/2 cups (190g) all-purpose flour

1 cup (170g) semi-sweet chocolate chips

Optional: 1/2 cup (50g) chopped walnuts or pecans for added crunch

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease it with cooking spray.

    Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas, melted butter, brown sugar, and granulated sugar. Stir until well combined.

      Add the Egg and Vanilla: Add the egg and vanilla extract to the banana mixture, and mix until smooth and creamy.

        Combine Dry Ingredients: In another bowl, whisk together the baking soda, baking powder, salt, and all-purpose flour. Ensure there are no lumps.

          Combine Wet and Dry Mixtures: Gradually fold the dry mixture into the wet ingredients until just combined. Be careful not to overmix as this can lead to dense muffins.

            Add Chocolate Chips: Gently fold in the semi-sweet chocolate chips and, if using, the chopped walnuts or pecans.

              Fill the Muffin Tin: Divide the batter evenly among the prepared muffin cups, filling each cup about 3/4 full.

                Bake: Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

                  Cool: Once done, remove the muffins from the oven and allow them to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
