For the crust:

1 ½ cups chocolate cookie crumbs (such as Oreo)

½ cup unsalted butter, melted

2 tablespoons sugar

For the cheesecake filling:

16 oz cream cheese, softened

¾ cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 cup sour cream

1 cup fresh or frozen cherries, pitted and halved

½ cup semi-sweet chocolate chips

For the topping:

½ cup heavy whipping cream

2 tablespoons powdered sugar

¼ cup chocolate chips, melted

Fresh cherries for garnish

Instructions
 

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the chocolate cookie crumbs, melted butter, and sugar. Mix until well combined.

        - Press the mixture into the bottom of a 9-inch springform pan, creating an even layer. Bake for 10 minutes, then remove and let it cool.

          Make the cheesecake filling:

            - In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth.

              - Gradually add the granulated sugar and beat until fully incorporated.

                - Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

                  - Mix in the sour cream until the mixture is creamy and smooth.

                    - Gently fold in the sliced cherries and chocolate chips.

                      Bake the cheesecake:

                        - Pour the cheesecake filling over the cooled crust and spread it evenly.

                          - Bake in the preheated oven for 50-60 minutes, or until the edges are set and the center is slightly jiggly.

                            - Turn off the oven and crack the oven door, allowing the cheesecake to cool inside for another hour. This helps prevent cracking.

                              Chill the cheesecake:
