Ingredients

4 large eggs

1/2 cup granulated sugar

1/4 cup all-purpose flour

1/4 teaspoon baking powder

1/4 cup milk

1 teaspoon vanilla extract

1 tablespoon vegetable oil

Pinch of salt

Optional: 1/4 cup of finely chopped green onions or herbs (for savory versions)

Instructions

Preheat the Steamer: If using a bamboo steamer, line it with parchment paper and set it over a pot of boiling water. If using an electric steamer, preheat it according to the manufacturer’s instructions.

Prepare the Batter: In a mixing bowl, separate the eggs, placing egg whites in one bowl and yolks in another. Beat the egg yolks with the sugar until pale and thick.

Mix Dry Ingredients: Sift together the flour, baking powder, and salt in a separate bowl to aerate the mixture.

Combine the Mixtures: Gradually add the milk and vanilla extract into the egg yolk mixture, then fold in the dry ingredients until just combined.

Whip Egg Whites: In a clean mixing bowl, beat the egg whites until soft peaks form. This may take about 3-5 minutes using an electric mixer. Gently fold the whipped egg whites into the batter in three additions, being careful not to deflate the mixture.

Add Oil: Drizzle the vegetable oil around the bowl and gently fold it into the batter.

Transfer to Steamer: Pour the batter into the prepared steaming dish (or mold) and smooth the top with a spatula.

Steam the Cake: Place the dish in the steamer, cover it with a lid, and steam for about 20-25 minutes, or until a toothpick inserted into the center comes out clean.

Cool and Slice: Once cooked, remove the cake from the steamer and let it cool for a few minutes. Carefully transfer it to a wire rack. Slice and serve warm or at room temperature.

Add Optional Flavors: If desired, serve topped with a sprinkle of fresh herbs for a savory twist, or enjoy it plain as a light snack.
