Chilled Watermelon Gazpacho

4 cups ripe watermelon, cubed and seeds removed

1 medium cucumber, peeled and diced

1 small red bell pepper, diced

1 small red onion, finely chopped

1 clove garlic, minced

2 tablespoons extra-virgin olive oil

2 tablespoons white wine vinegar

Juice of 1 lime

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

Fresh mint leaves, for garnish

Optional: a pinch of cayenne pepper for a kick

Instructions
 

Prepare the Watermelon: In a blender, add half of the cubed watermelon and blend until smooth. Pour into a large mixing bowl and set aside.

    Blend the Vegetables: In the same blender, add the remaining watermelon, cucumber, red bell pepper, red onion, garlic, olive oil, white wine vinegar, lime juice, salt, and black pepper. Blend until the mixture is smooth but still has some texture.

      Combine & Chill: Pour the blended mixture into the bowl with the previously blended watermelon. Stir well to combine all the ingredients. Taste and adjust seasoning if necessary, adding cayenne pepper for added heat if desired.

        Refrigerate: Cover the gazpacho and refrigerate for at least 1 hour or until thoroughly chilled. This allows the flavors to meld beautifully.

          Serve: Once chilled, ladle the soup into bowls. Garnish with fresh mint leaves and an extra drizzle of olive oil if desired. Enjoy the colorful and refreshing flavors of summer!
