6 ripe tomatoes, chopped

1 cup fresh basil leaves, packed

1 medium cucumber, peeled and diced

1 small red onion, chopped

2 cloves garlic, minced

2 tablespoons extra-virgin olive oil

2 tablespoons red wine vinegar

Salt and black pepper to taste

1 cup vegetable broth (chilled)

½ teaspoon sugar (optional, to balance acidity)

Fresh basil leaves for garnish

Prep the tomatoes: In a blender or food processor, combine the chopped tomatoes and purée until smooth. If you prefer a chunky texture, pulse gently until it reaches your desired consistency.

    Blend in the greens: Add the fresh basil, cucumber, red onion, garlic, olive oil, red wine vinegar, and optional sugar to the blender with the tomato purée. Blend until all ingredients are well combined and smooth.

      Season: Taste the soup and season with salt and black pepper. Blend again briefly to mix the seasonings evenly.
