Chilled Mediterranean Couscous Salad

1 cup couscous

1 cup vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cucumber, diced

1 bell pepper (red or yellow), diced

½ cup red onion, finely chopped

½ cup Kalamata olives, pitted and halved

½ cup crumbled feta cheese

¼ cup fresh parsley, chopped

¼ cup fresh mint, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste

Cook the Couscous: In a saucepan, bring the vegetable broth (or water) to a boil. Stir in the couscous, remove from heat, and cover for 5 minutes. Fluff the couscous with a fork and let it cool completely.

    Prepare the Vegetables: While the couscous is cooling, prepare the vegetables. Chop the cherry tomatoes, cucumber, bell pepper, and red onion. Set aside in a large mixing bowl.

      Mix the Salad: Once the couscous has cooled, add it to the bowl with the chopped vegetables. Toss in the olives, feta cheese, parsley, and mint.

        Dress the Salad: In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the salad mixture and toss gently to combine all ingredients.

          Chill: Cover the salad and refrigerate for at least 30 minutes to allow the flavors to meld.
