4 cups fresh basil leaves, loosely packed

2 cups vegetable broth

1 cup plain Greek yogurt

1 cup fresh lemon juice (about 4-6 lemons)

Zest of 2 lemons

2 tablespoons honey or agave syrup (adjust for sweetness)

1 clove garlic, minced

1 teaspoon sea salt

1/2 teaspoon freshly ground black pepper

1/4 cup extra virgin olive oil

1 cucumber, diced, for garnish

Fresh basil leaves, for garnish

Lemon slices, for garnish

Instructions
 

Prepare the Basil: Rinse the basil leaves under cold water and pat them dry with a clean kitchen towel. Set aside.
