Ingredients

2 ripe avocados, halved and pitted

2 cups vegetable broth (chilled)

1 cup Greek yogurt (or dairy-free yogurt)

1 small cucumber, peeled and roughly chopped

1/4 cup fresh cilantro, chopped (plus more for garnish)

1 small lime, juiced

1 garlic clove, minced

1/2 teaspoon ground cumin

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: diced tomatoes, radishes, or croutons

Instructions

Prep the Ingredients: Start by gathering all your ingredients. Halve and pit the avocados, peel the cucumber, and chop the cilantro.

Blend the Base: In a blender, combine the avocados, vegetable broth, Greek yogurt, chopped cucumber, cilantro, lime juice, minced garlic, and ground cumin. Blend until smooth and creamy. If you like a thinner consistency, adjust by adding more chilled vegetable broth.

Season to Taste: After blending, taste the soup and add salt and pepper as needed. Recall that you can adjust the flavors by adding more lime juice for tartness or more cumin for warmth.

Chill the Soup: Transfer the creamy mixture to a bowl or airtight container and refrigerate for at least 30 minutes to 1 hour. This will enhance the flavors and serve the soup nice and chilled.

Serve: Once chilled, give the soup a good stir. Ladle it into bowls and drizzle a bit of olive oil on top. Garnish with additional cilantro, and if desired, add your choice of toppings like diced tomatoes, radishes, or croutons for an added crunch.

Enjoy: Serve immediately, and enjoy this refreshing, nutritious chilled avocado soup on a warm day!
