Ingredients

4 cups seedless watermelon, diced

1 cup cucumber, diced

1/2 cup red onion, thinly sliced

1/2 cup fresh cilantro, chopped

1 jalapeño, seeded and finely chopped

Zest and juice of 2 limes

2 tablespoons honey or agave syrup

1/4 teaspoon sea salt (or to taste)

1/4 teaspoon black pepper

1/4 teaspoon chili powder (optional for extra spice)

Crumbled feta cheese (optional, for serving)

Instructions

Prepare the Watermelon: Start by slicing the watermelon into small cubes. Aim for uniform pieces to make the salad easy to eat and visually appealing.

Chop Other Ingredients: Dice the cucumber and thinly slice the red onion. Additionally, finely chop the jalapeño (adjust the amount according to your spice preference) and cilantro.

Make the Dressing: In a small bowl, combine lime zest, lime juice, honey or agave syrup, sea salt, black pepper, and chili powder (if using). Whisk until the ingredients are well mixed.

Combine Ingredients: In a large mixing bowl, add the diced watermelon, cucumber, red onion, jalapeño, and cilantro. Pour the dressing over the salad and gently toss to combine, making sure all the ingredients are evenly coated.

Taste and Adjust: Taste the salad and adjust seasonings if necessary. You can add more lime juice for acidity, honey for sweetness, or salt as per your preferences.

Serve: Transfer the salad to a serving dish. If desired, sprinkle crumbled feta cheese over the top for an additional layer of flavor.

Chill and Enjoy: For the best flavor, let the salad refrigerate for about 30 minutes before serving to allow the flavors to meld together.
