Chili Lime Roasted Chickpeas

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 teaspoon chili powder

½ teaspoon smoked paprika

½ teaspoon garlic powder

½ teaspoon ground cumin

Zest of 1 lime

Juice of 1 lime

Salt, to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Chickpeas: Drain and rinse the chickpeas thoroughly under cold water. Pat them dry with a kitchen towel. The drier they are, the crispier they will get when roasted.

      Season the Chickpeas: In a large mixing bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, cumin, lime zest, lime juice, and a pinch of salt. Stir well until all the spices are combined into the oil.

        Coat the Chickpeas: Add the chickpeas to the bowl and toss until they are evenly coated with the spice mixture.

          Spread on Baking Sheet: Transfer the seasoned chickpeas to the prepared baking sheet, spreading them out in a single layer.

            Roast: Bake in the preheated oven for 25-30 minutes, stirring halfway through, until the chickpeas are golden brown and crispy.

              Cool & Garnish: Once roasted, remove from the oven and let them cool for a few minutes. Taste and adjust seasoning if desired. Sprinkle fresh cilantro on top for added flavor and a pop of color (optional).
