Chili Lime Grilled Tofu

Ingredients
  

1 block (14 oz) firm tofu, pressed and drained

1/4 cup fresh lime juice (about 2 limes)

Zest of 1 lime

3 tablespoons soy sauce or tamari

2 tablespoons olive oil

2 tablespoons chili paste or sriracha (adjust for heat preference)

2 cloves garlic, minced

1 tablespoon maple syrup (or agave nectar)

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and black pepper, to taste

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions
 

Prepare the Tofu:

    - Start by pressing the tofu to remove excess water. Wrap it in a clean kitchen towel or paper towels and place a heavy object (like a skillet) on top for about 15-20 minutes.

      Make the Marinade:

        - In a bowl, combine the lime juice, lime zest, soy sauce, olive oil, chili paste, minced garlic, maple syrup, ground cumin, smoked paprika, and a pinch of salt and black pepper. Whisk until well blended.

          Marinate the Tofu:

            - Once the tofu is pressed, cut it into 1/2-inch thick slices. Place the slices into a shallow dish and pour the marinade over them. Ensure all pieces are well coated. Cover and refrigerate for at least 30 minutes (or up to 2 hours for more flavor).

              Preheat the Grill:

                - Preheat your grill or grill pan over medium-high heat. Lightly grease the grill grates with oil to prevent sticking.

                  Grill the Tofu:

                    - Remove the tofu slices from the marinade (reserve the marinade for basting). Place them on the grill. Cook for about 5-7 minutes on one side, then carefully flip and grill for another 5-7 minutes until grill marks appear and the tofu is heated through.

                      Baste as You Grill:

                        - If desired, use a brush to baste the tofu with the reserved marinade during the last few minutes of grilling for an extra kick of flavor.

                          Serve:

                            - Once done, remove the grilled tofu from the grill. Serve warm, garnished with fresh cilantro and lime wedges on the side.
