8 oz thick rice noodles or egg noodles

4 cloves garlic, minced

1-inch piece of ginger, grated

3-4 red chili peppers, sliced (adjust for spice preference)

3 tablespoons soy sauce

2 tablespoons oyster sauce (or mushroom sauce for a vegetarian option)

1 tablespoon chili oil (adjust to taste)

1 tablespoon sesame oil

1-2 green onions, sliced (for garnish)

Fresh cilantro, for garnish

For the crispy tofu:

14 oz firm tofu, drained and pressed

2 tablespoons cornstarch

Salt and pepper, to taste

Vegetable oil, for frying

Instructions
 

Prepare the Tofu:

    - Cut the pressed tofu into cubes (about 1-inch pieces). Season with salt and pepper.

      - In a bowl, coat the tofu cubes with cornstarch, ensuring each piece is evenly covered.

        Fry the Tofu:

          - Heat enough vegetable oil in a skillet over medium-high heat to cover the bottom of the pan. Once hot, add the tofu cubes in a single layer (you may need to do this in batches).

            - Fry until all sides are golden brown and crispy, around 3-4 minutes per side. Remove from the pan and drain on paper towels.

              Cook the Noodles:

                - Cook the noodles according to package instructions. Drain and rinse under cold water to stop cooking. Set aside.

                  Make the Chili Garlic Sauce:

                    - In the same skillet (or a separate one if preferred), heat 3 tablespoons of vegetable oil over medium heat.

                      - Sauté minced garlic, grated ginger, and sliced red chili peppers for about 1-2 minutes until fragrant. Be careful not to burn the garlic.

                        Combine Everything:

                          - Add the cooked noodles into the skillet with the garlic-chili mixture. Pour in the soy sauce, oyster sauce, chili oil, and sesame oil.
