Chickpea and Spinach Curry

1 can (15 oz) chickpeas, drained and rinsed

4 cups fresh spinach, chopped

1 medium onion, finely chopped

2 cloves garlic, minced

1 inch ginger, grated

1 can (14 oz) diced tomatoes

1 can (14 oz) coconut milk

2 tbsp olive oil

2 tsp curry powder

1 tsp ground cumin

1/2 tsp turmeric powder

1/2 tsp red chili flakes (adjust to taste)

Salt and pepper, to taste

1 tbsp lemon juice

Fresh cilantro, chopped for garnish

Sauté Aromatics: In a large pan, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add Garlic and Ginger: Stir in the minced garlic and grated ginger. Cook for another 1-2 minutes, until fragrant.

      Spice it Up: Add the curry powder, ground cumin, turmeric, and red chili flakes to the pan. Cook for about 1 minute, stirring frequently to release the flavors.

        Tomatoes and Chickpeas: Pour in the diced tomatoes and stir. Let it simmer for 3-4 minutes. Then, add the drained chickpeas and stir until well combined.

          Creamy Coconut: Pour in the coconut milk, mixing well. Bring the mixture to a gentle simmer, and let it cook for about 10 minutes to thicken slightly.

            Add Spinach: Gradually add the chopped spinach, stirring it until it wilts completely. Cook for an additional 3-5 minutes.

              Season and Finish: Season with salt and pepper to taste. Add the lemon juice for a fresh zing and give it a final gentle stir.
