Chicken Skewers with Peach Salsa

For the Chicken Skewers:

1 lb (450g) boneless, skinless chicken thighs, cut into 1-inch cubes

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon smoked paprika

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons fresh lemon juice

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced

½ red onion, finely chopped

1 jalapeño, seeded and minced

¼ cup fresh cilantro, chopped

Juice of 1 lime

Salt and pepper to taste

Marinate the Chicken:

    In a mixing bowl, combine the olive oil, garlic powder, smoked paprika, cumin, salt, pepper, and lemon juice. Add the cubed chicken thighs and toss to coat evenly. Cover the bowl and let it marinate in the fridge for at least 30 minutes or up to 2 hours for deeper flavor.

      Prepare the Peach Salsa:

        In another bowl, combine the diced peaches, red onion, jalapeño, and cilantro. Squeeze the lime juice over the mixture and season with salt and pepper to taste. Mix well and let it sit for about 15-20 minutes to allow the flavors to meld.

          Skewer the Chicken:

            Thread the marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

              Grill the Skewers:

                Preheat your grill to medium-high heat. Once hot, place the chicken skewers on the grill. Cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. The internal temperature should reach 165°F (75°C).

                  Serve:

                    Remove the skewers from the grill and let them rest for a few minutes. Serve the chicken skewers warm, topped with a generous spoonful of the fresh peach salsa.
