1/4 cup grated Parmesan cheese

1/4 cup breadcrumbs

1 large egg

2 cloves garlic, minced

1 teaspoon Italian seasoning

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional)

For the Spinach Alfredo Sauce:

2 cups fresh spinach, chopped

1 cup heavy cream

1/2 cup grated Parmesan cheese

2 tablespoons unsalted butter

2 cloves garlic, minced

Salt and pepper to taste

Pinch of nutmeg (optional)

To Serve:

Cooked pasta of your choice (fettuccine, linguine, or zucchini noodles)

Additional grated Parmesan cheese (for garnish)

Fresh parsley or basil (for garnish)

Instructions

Prepare the Meatballs:

    - In a large mixing bowl, combine the ground chicken, ricotta cheese, grated Parmesan cheese, breadcrumbs, egg, minced garlic, Italian seasoning, salt, pepper, and parsley (if using). Mix well until all ingredients are fully incorporated.

      - Form the mixture into meatballs (about 1 1/2 inches in diameter) and place them on a baking sheet lined with parchment paper.

        Cook the Meatballs:

          - Preheat your oven to 375°F (190°C). Bake the meatballs for about 20-25 minutes, or until they are cooked through and golden brown. Alternatively, you can pan-fry them in a skillet with a little olive oil for about 6-8 minutes on each side, ensuring they are cooked through.

            Make the Spinach Alfredo Sauce:

              - In a large skillet over medium heat, melt the butter. Add the minced garlic and sauté for about 1 minute until fragrant.

                - Pour in the heavy cream and bring it to a gentle simmer. Stir in the grated Parmesan cheese until melted and smooth. Add the chopped spinach and cook until wilted.

                  - Season the sauce with salt, pepper, and a pinch of nutmeg (if desired). Allow the sauce to thicken slightly over low heat for about 3-5 minutes.

                    Combine and Serve:

                      - Once the meatballs are cooked, gently add them to the spinach Alfredo sauce in the skillet. Coat the meatballs evenly with the sauce and let them simmer together for a couple of minutes.

                        - Serve over cooked pasta in bowls, garnished with additional grated Parmesan cheese and fresh parsley or basil.
