Chicken, Mushroom, and Spinach Lasagna

9 lasagna noodles

2 tablespoons olive oil

1 pound ground chicken

1 medium onion, diced

3 cloves garlic, minced

8 ounces mushrooms, sliced

4 cups fresh spinach

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 cups ricotta cheese

1 egg

2 cups shredded mozzarella cheese

1 cup grated Parmesan cheese

4 cups marinara sauce

Instructions
 

Prepare the Noodles: In a large pot of boiling salted water, cook the lasagna noodles according to package instructions until al dente. Drain and set aside.

    Cook the Chicken Mixture: In a large skillet, heat olive oil over medium heat. Add diced onion and cook until softened, about 5 minutes. Stir in minced garlic and cook for an additional minute. Add ground chicken and cook until browned, about 6-8 minutes.

      Add Mushrooms and Spinach: To the skillet, add sliced mushrooms and sauté until tender. Then, add the fresh spinach and cook until wilted. Season the mixture with oregano, basil, salt, and pepper. Remove from heat and let cool for a few minutes.

        Prepare the Ricotta Filling: In a mixing bowl, combine ricotta cheese, egg, a pinch of salt, and pepper. Mix until smooth and well combined.

          Assemble the Lasagna: Preheat your oven to 375°F (190°C). In a 9x13 inch baking dish, spread a thin layer of marinara sauce on the bottom. Layer 3 lasagna noodles over the sauce. Spread half of the chicken mixture over the noodles, followed by a layer of the ricotta mixture, and top with ⅓ of the mozzarella cheese. Repeat the layering with another 3 noodles, remaining chicken mixture, and ricotta mixture. Top with the final 3 noodles, the remaining marinara sauce, and the rest of the mozzarella cheese and Parmesan cheese.

            Bake the Lasagna: Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Let the lasagna sit for 10 minutes before slicing. Garnish with fresh basil if desired, and serve warm.
