Chicken Fajita Casserole Recipe

1 pound boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 bell pepper (any color), sliced

1 medium onion, chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup salsa

2 cups cooked rice (white or brown)

1 ½ cups shredded cheddar cheese

Fresh cilantro, chopped (for garnish)

Optional: sour cream, avocado slices, or lime wedges for serving

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the diced chicken, season with chili powder, cumin, smoked paprika, salt, and pepper. Cook until the chicken is golden and cooked through, about 5-7 minutes. Remove from the skillet and set aside.

      Cook the Vegetables: In the same skillet, add the sliced bell pepper, chopped onion, and minced garlic. Sauté for 4-5 minutes, or until the vegetables are softened.

        Combine Ingredients: In a large mixing bowl, combine the cooked chicken, sautéed vegetables, black beans, corn, salsa, and cooked rice. Mix everything together until well combined.

          Assemble the Casserole: Transfer the mixture into a greased 9x13-inch baking dish. Spread it evenly. Sprinkle the shredded cheddar cheese on top.
