1 lb chicken breast, diced

1 bell pepper (red or yellow), sliced

1 medium onion, sliced

2 cloves garlic, minced

1 cup corn kernels (fresh or frozen)

1 cup black beans, rinsed and drained

1 cup cooked rice (white or brown)

1 cup shredded cheddar cheese

1 cup salsa

1 tbsp olive oil

1 tbsp fajita seasoning

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (optional, for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Vegetables: In a large skillet, heat olive oil over medium-high heat. Add sliced bell pepper, onion, and minced garlic. Sauté for about 5 minutes until the vegetables soften.

      Cook Chicken: Add the diced chicken to the skillet along with the fajita seasoning. Cook for about 7-8 minutes or until the chicken is cooked through and no longer pink.

        Combine Ingredients: Reduce the heat to low, and stir in corn, black beans, rice, and salsa. Mix well until all ingredients are combined, and let it cook for another 2-3 minutes to warm through. Season with salt and pepper to taste.

          Layer the Casserole: In a greased 9x13 inch baking dish, pour half of the chicken mixture, then sprinkle half of the shredded cheddar cheese on top. Pour the remaining chicken mixture over that and top with the remaining cheese.

            Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and golden.

              Garnish and Serve: Once done, remove from the oven and let it sit for a few minutes. Garnish with fresh cilantro before serving. Optional: serve with tortilla chips on the side.
