2 cups cooked and shredded chicken

1 cup frozen mixed vegetables (peas, carrots, corn)

1 can (10.5 oz) cream of chicken soup

1 cup chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon dried thyme

1 cup milk

2 cups biscuit mix

1/2 cup grated cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a 9x13 inch casserole dish.

    In a large bowl, combine the shredded chicken, frozen mixed vegetables, cream of chicken soup, chicken broth, garlic powder, onion powder, paprika, black pepper, and thyme. Mix well until everything is evenly coated and combine all ingredients.

      Pour the chicken and vegetable mixture into the prepared casserole dish and spread it out evenly.

        In another bowl, whisk together the milk and biscuit mix until just combined. Do not overmix; it’s okay if there are a few lumps.

          Carefully spoon the biscuit mixture over the chicken and vegetable layer, spreading it out but leaving some gaps for the sauce to bubble up.

            Sprinkle the grated cheddar cheese over the top of the biscuit layer.

              Cover the casserole dish with aluminum foil and bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 15-20 minutes or until the biscuit topping is golden brown and cooked through.

                  Remove from the oven and let cool for a few minutes. Garnish with fresh parsley before serving.
