9 lasagna noodles

2 cups cooked chicken, shredded (rotisserie chicken works great)

1 cup ricotta cheese

1 cup mozzarella cheese, shredded

½ cup Parmesan cheese, grated

2 cups Alfredo sauce (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon Italian seasoning

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Lasagna Noodles: In a large pot, bring salted water to a boil. Add the lasagna noodles and cook according to package instructions until al dente. Drain and lay the noodles flat on a clean kitchen towel to cool.

      Make the Chicken Filling: In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, half of the Parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. Mix until well combined.

        Assemble the Rolls: Spread a thin layer of Alfredo sauce (about ½ cup) on the bottom of a 9x13 inch baking dish. Take one lasagna noodle and spoon about 2-3 tablespoons of the chicken mixture onto it. Roll the noodle tightly around the filling and place it seam-side down in the baking dish. Repeat with remaining noodles and filling.

          Top with Sauce and Cheese: Once all rolls are arranged in the baking dish, pour the remaining Alfredo sauce over the top, ensuring all rolls are covered. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the sauce.

            Bake: Cover the dish with aluminum foil (to prevent sticking, you can spray the foil with cooking spray). Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.

              Garnish and Serve: Allow the lasagna rolls to cool for a few minutes before garnishing with fresh parsley. Serve warm and enjoy!
