Ingredients

1 cup all-purpose flour

1/2 cup rolled oats

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon ground cinnamon

1/2 cup unsalted butter, softened

1/3 cup brown sugar, packed

1/3 cup granulated sugar

1 large egg

1 teaspoon pure vanilla extract

1/4 cup maple syrup

1/2 cup white chocolate chips

1/4 cup pecans or walnuts, chopped (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, rolled oats, baking powder, baking soda, salt, and ground cinnamon. Set aside.

Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes.

Add Egg and Flavorings: Add the egg, vanilla extract, and maple syrup to the butter mixture. Mix until fully incorporated.

Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.

Stir in Extras: Fold in the white chocolate chips and chopped pecans or walnuts, if using.

Form the Cookies: Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheet, spacing them about 2 inches apart to allow for spreading.

Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden and the centers look slightly underbaked (they will continue to firm up as they cool).

Cool: Remove from the oven and let the cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Enjoy: Once cooled, dig in and enjoy your delectable chewy French Toast Cookies!
