Ingredients

2 cups unsweetened shredded coconut

1 cup sweetened condensed milk

1/2 cup almond flour

1/4 cup honey or maple syrup

1 teaspoon vanilla extract

1/4 teaspoon salt

1/2 cup dark chocolate chips (optional)

1/4 cup chopped nuts (such as almonds or walnuts, optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch (20x20 cm) square baking dish with parchment paper, leaving some overhang for easy removal later.

Combine Ingredients: In a mixing bowl, combine the shredded coconut, almond flour, and salt. Stir gently until mixed well.

Mix the Wet Ingredients: In a separate bowl, whisk together the sweetened condensed milk, honey (or maple syrup), and vanilla extract until smooth.

Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Mix well until everything is evenly combined. If you’re adding chocolate chips or nuts, fold them in at this point.

Spread into Baking Dish: Transfer the mixture into the prepared baking dish. Using a spatula, press the mixture down firmly and evenly.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and the edges are slightly crisp.

Cool: Once done, remove the bars from the oven and allow them to cool in the baking dish for about 15 minutes. Then, lift the bars out using the parchment overhang and let them cool completely on a wire rack.

Cut and Serve: Once cooled, use a sharp knife to cut the bars into squares or rectangles. Serve as a delicious snack or dessert!

Store: Store the chewy coconut bars in an airtight container at room temperature for up to a week or in the refrigerator for longer freshness.
