Chewy Churro Cookies

1 ¾ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ cup unsalted butter, softened

1 cup packed brown sugar

½ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

½ cup white chocolate chips (optional)

¼ cup granulated sugar (for rolling)

2 teaspoons ground cinnamon (for rolling)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and 1 teaspoon of ground cinnamon. Set aside.

      Cream Butter and Sugars: In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar together using an electric mixer until the mixture is light and fluffy, about 2-3 minutes.

        Add Egg and Vanilla: Add the egg and vanilla extract to the butter mixture. Beat until well combined.

          Combine Dry and Wet Ingredients: Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Be careful not to overmix. If you're adding white chocolate chips, fold them in gently at this stage.

            Chill the Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes. This will help the cookies maintain their shape while baking.

              Prepare Cinnamon Sugar: While the dough is chilling, mix ¼ cup of granulated sugar with 2 teaspoons of cinnamon in a small bowl. Set aside.

                Form Cookies: Once chilled, scoop out about 1.5 tablespoons of dough and roll it into a ball. Roll each dough ball in the cinnamon sugar mixture until fully coated. Place them on the prepared baking sheet, spaced about 2 inches apart.

                  Bake: Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden. The centers may look underbaked; they will continue to set as they cool.

                    Cool Down and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. Enjoy your chewy churro cookies with a glass of milk or your favorite hot beverage!
