2 medium zucchinis (about 1 ½ cups shredded)

1 cup granulated sugar

½ cup packed brown sugar

½ cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon baking powder

½ teaspoon salt

1 teaspoon ground cinnamon

½ teaspoon ground nutmeg

1 cup semi-sweet chocolate chips

½ cup chopped walnuts (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan, or line it with parchment paper for easy removal.

    Prepare the Zucchini: Grate the zucchinis using a box grater. Once grated, place them in a clean kitchen towel and squeeze out excess moisture. This step ensures the bread isn’t too watery.

      Mix Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Whisk until well combined. Then add in the eggs one at a time, mixing thoroughly after each addition. Finally, stir in the vanilla extract.

        Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, baking powder, salt, cinnamon, and nutmeg until evenly mixed.
